Wisconsin finally has spring (summer?) on her mind! Today, it’s up to 80 after a gorgeous night last night! We were able to take the dogs for a nice long walk. And when we got home, I found these little guys popping up in front of our house. We rent, so it was a pleasant surprise to find these, especially since everything had been covered in snow when we viewed the place and moved in.
Also, I’ve always had mixed feelings about Greek yogurt. But, no longer!!!! I have jumped on the Chobani Flip wagon and I’m not getting off any time soon! This coconut/almond/dark chocolate combo was to die for! YUM.
And now to the real good stuff! An easy dinner that can feed you for days!
It is no surprise that this is one of Craig’s favorite dishes. As a bachelor, his diet consisted of frozen pizza, macaroni & cheese, hot dogs, and frozen pot pies. Yowza.
This is a super yummy, super easy dish to whip up that is sure to satisfy everyone in the household! Not to mention we had leftovers for days, which made for easy lunches! It isn’t an overly healthy dish, but it sure beats a regular frozen pizza. This was a Pinterest find and you can find the original recipe here. I did make a few minor adjustments, but this is one of those things where measuring isn’t really necessary, just throw and go!
– 1 bag egg noodles
– 2 jars Prego Traditional spaghetti sauce
– 3 c Mozzarella cheese, shredded
– 1 1/2 lbs turkey burger
– 1 pkg mini pepperonis
Brown the meat and drain grease. Meanwhile, boil the noodles per package directions, until soft; drain. In a greased 9 x 13 casserole layer: thin layer of tomato sauce – half of the noodles – half of the meat – rest of the noodles – half of the cheese – rest of the meat – rest of the sauce – rest of the cheese. Lastly, top with pepperonis.
Cover with foil and bake for 30 minutes. After 30 minutes, remove foil and bake for an additional 15 minutes. Remove from oven and let sit for at least 10 minutes.
Wasn’t that easy? I made this on a Monday and it fed us for lunch through Thursday. …I apologize if anyone finds the fact I ate leftovers for that many days after the fact. Not an overly healthy meal, but it’s easy and great for a week that you’re on the go!
